Abstract

. The nutritional quality of Candida utilis lysine rich mutant Y 660-14 grown in sugar cane molasses was evaluated. Net protein utilization (NPU) Biological value (BV) and Digestibility "in vivo" (D) were applied as nutritional evaluation indexes and the results were compared with those of another yeast industrially produced for animal consumption. The yeast protein of Y 660-14 lysine rich mutant showed higher nutritional value than the yeast presently utilized in the animal foodstuffs.
