Abstract

. In this paper it is report the results of the influence of the temperature and time of incubation in the reduction of the nucleic acid content in baker's yeast (S. cerevisiae) in alkaline medium at different 'concentrations of ammonium hydroxide . Using only one step of incubation at 65•C during 30 minute, in alkaline medium an 85% of nucleic acid reduction was obtained which represent a final concentration of nearly 1,1%. During the thermal treatment the losses of biomass and proteins were of 19,3% and 10,4% respectively .
