Abstract

The liberation of nucleic acids and the losses of biomass and proteins with the time are reported at different temperatures of incubation, from 45• to 80• , using ammonium hydroxide in concentration of aproximately 5% based on dry yeast weight. At 65• during 30 minutes, a final product was obtained with a nucleic acid content of 1,30%, chowing during the process losses of biomass and proteins of 19,9% and 10,1% respectively.
